A creative team comprising Quebec City–based filmmakers François Dubé and Guillaume Fournier and content producer Allison Van Rassel is currently shooting the feature-length documentary Après les étoiles. Filmed before, during and after the history-making arrival of the celebrated Michelin Guide in Quebec, the documentary chronicles the journey of three iconic restaurants in the provincial capital and their chefs:
- Tanière3, Chef François-Emmanuel Nicol: Awarded two Michelin Stars;
- Melba, Chefs Charles Provencher-Proulx and Alexandra Roy: Awarded a Michelin Bib Gourmand and winners of Chefs of the Year (2025) at the Lauriers de la gastronomie du Québec;
- Le Clan, Chef Stéphane Modat: Recommended by the Michelin Guide and winner of Restaurant of the Year (2025) at the Lauriers de la gastronomie.
Spanning a little more than a year in the lead-up to the unveiling of the new Quebec Michelin Guide and the restaurant evaluations for the next year, Après les étoiles offers a privileged inside look at this pivotal period. Audiences will see how it all played out through the eyes of these local restaurant movers and shakers, and watch as the chefs take centre stage, masterfully and passionately affirming and redefining Quebec’s culinary identity.
The film, whose theatrical release is slated for 2027, is distributed by the NFB and co-produced by François Dubé, Guillaume Fournier for VF3 (a joint venture of Quebec City–based production companies Frangin and VF2) and Mélanie Brière for the NFB French Documentary Unit. Après les étoiles can be translated as “after the stars”; an English title for the film is forthcoming.
About the creative team
François Dubé – co-director
After studying biology and earning a master’s degree in international ecology, François Dubé turned to documentary filmmaking. He entered the spotlight after winning the 2012 Course Évasion autour du monde, a round-the-world reality documentary competition, then completed several projects, including the series Le bonheur en Scandinavie (2013), which went on to garner several Gémeaux Award nominations. In 2018, he founded the production company Frangin. Since then, Dubé’s credits have included both producer (Le peuple de la mer, 2023) and director (A Tempo, 2019) roles, through which he’s explored new ways of telling rich, meaningful stories, consistently striving for cohesion of form and content.
Guillaume Fournier – co-director
Guillaume Fournier is a screenwriter, director and producer. His directing credits include the documentaries Acadiana and Belle River, which have been screened at more than 190 festivals and nominated for Canadian Screen Awards and Gala Québec Cinéma awards, in addition to being named to TIFF’s Canada’s Top 10. As a fiction screenwriter, Fournier’s projects include the comedy Deux Dollars, a Vimeo Best of the Year nominee, and the thriller Free Fall, which has racked up 82 awards and honours, including the International Competition Grand Prize at the REGARD festival. In 2018, he completed his first feature-length script, Ailleurs.
Allison Van Rassel – content producer
Allison Van Rassel is an influential food columnist, media commentator, blogger and content creator known for her expertise and infectious passion for fine foods and the people who prepare them. She has more than 25 years of media experience, working in both English and French. A pioneer of the foodie movement in Quebec, she has built a sterling reputation as a contributor to prestigious media outlets ranging from CBC/Radio-Canada to The Globe and Mail, The New York Times, National Geographic and Le Monde. Van Rassel is a recipient of the Rayonnement de la culture culinaire québécoise (“Quebec cuisine culture outreach”) award from the Lauriers de la gastronomie du Québec.
