After the menus were created, we did have a curve ball as well. It was molasses.

I don't think it will be that difficult to incorporate molasses in our plan already.

Instantly knew to throw it in with the tomato jam for the fritter. Incorporating it into the desert, the gastrique only beginning for the starter sauce.

Curve ball! Love it! Give me a molasses, I love it. We got it, easy peasy.

With our game plan that we have, it was kind of a curve ball. Like it was black licorice or something then we'd be in trouble. It’s still kind of a little wrench in the game, but I think we can incorporate that with our dessert. Change the color, like that will be the brown leaf. Damn, I love it when great minds think alike.

A lot of times, teams in a competition like this butt heads. What I'm most proud of our team is the teamwork and the creativity that we put together as a team. Here's a little flambé action for you.

We’re going to be prepared to, you know, execute what we need to execute.

There was a couple of hiccups.

I found out the blast chiller wasn't getting cold. So, I put my dessert in the freezer, hoping that will do, and it did not. The pressure was definitely on.

But I think time management is definitely the big one.

You always feel like you have enough time and then time blows by and all of a sudden it's two minutes to plating, and you’re just starting to plate.

The first course is always the one that catches you and then you kind of smarten up.

So, I had to bring the dessert and then take it all apart.

Just like, and if you've got a bunch of fritters that you can put out now, put them out now and then do another batch.

Oh, there's a **** ton of people out there, eh?

Just keep cooking steaks there, Parsons, okay?

I feel like it was so tight that I wish we could do a rematch.

I'll be honest, I think it's all going to come down to the dessert.

If no one knew my plan, then they don't need to know that anything went wrong.
