Just really trying to- and create height, incorporate colour, texture, and obviously the most important part, the flavor of the dish.
Who's presenting first?
The presentation is absolutely beautiful. The plates are cold, we find the fritter so far is a “gloop,” that they’re doughy, not a lot of flavour.
The other plate, so not much flavour. Overall temperature of this dish, though, is a lot better than this one and the sauce is excellently prepared.
This isn't supposed to be easy, this is supposed to be intense. Go, go, go, right? There comes a stage in your career when you can just put everything into theory and you can just make whatever. And you have to have that confidence, too.
Yeah, it needs to be under the heat again. Yeah, It's okay. That's what competitions are for.
All I'll say is this is like butter in my mouth. It's amazing.
The Potato Pavé, the sauce is broken inside. The blueberry sauce, probably not enough. The beef is perfectly cooked but it's flavour-less.
I take a lot of pride in food. I want these guys to also carry on that passion.
Overall, this steak trumps that, big time.
We're not just always cafeteria cooks and things like that. We do have skill sets, we do have backgrounds.
I’ve run multiple restaurants, golf clubs, hotels, resorts, stuff like that. Definitely is much nicer being in the military, that is for sure.
I’m going to be honest: I think it's all going to come down to the desert.
The outcome, not as I wanted, but if no one knew my plan, then they don't need to know that anything went wrong.
Are we early?
It was all just a big blur at the end of it now. I'm very tired.
We did have a couple of mishaps, but you know, we pulled her through, for sure.
For the appetizer, PSS took the prize on that one.
For the main entree, it went to CFLTC.
PSS also won the score for the dessert.
The overall winner, with a score of 128 out of 150 possible points... goes to CFLTC.
I really feel like it was so close that I would really, I would like to do another competition with them, just to really drive that nail in.
I just want to reiterate how close of a call this actually was. PSS, your overall score was 126 out of 150.
It feels good that the dessert portion won. I'm glad that I could bring that to the team.
We’ll be ready next time, for sure. Try it at our home turf, then we'll go from there. But
I'm very thankful that we won, and I'm very thankful that they gave us a good competition.
