CFIA Enhances Canada's Bison and Veal Grading Systems

OTTAWA, May 16, 2007 The Canadian Food Inspection Agency (CFIA) is amending the Livestock
and Poultry Carcass Grading Regulations to enhance Canadas bison and veal
carcass grading systems.
The amendments will help to ensure that meat from both bison heifers and bulls is
appropriately graded. The previous grading systems were developed at a time when the
majority of animals being slaughtered were bulls. To reflect the current reality, in which
heifers are routinely slaughtered, the revised grading standards take into account the
slower growth rate of heifers.
As a result of these enhancements, producers will be better recognized for the quality
and economic value of their bison meat. The changes will also extend current markets for
bison meat, which may help to increase bison exports.
The veal amendments increase the maximum weight for the grading of veal with hides
removed from 160 kg to 180 kg. The minimum weight for the grading of beef is also being
increased to 180 kg to ensure the consistency in the distinction between beef and veal.
These enhancements aim to harmonize the Meat Inspection Regulations and the Livestock
and Poultry Carcass Grading Regulations.
The amendments
to the Livestock and Poultry Carcass Grading Regulations have been published
in Canada Gazette, Part II and posted on the Canada Gazette Web site, at
