Curry chicken lettuce wraps
These wraps are so easy to prepare and super fun to eat. Prefer to use whole grain tortilla wraps? Try layering a lettuce leaf in your whole grain tortilla!

Ingredients
- 750 mL (3 cups) shredded or cubed cooked chicken breast
- 2 ½ stalks celery, diced
- 125 mL (½ cup) dried cranberries
- 125 mL (½ cup) slivered almonds
- 15 mL (1 tbsp) lemon juice (about ½ lemon)
- 5 mL (1 tsp) mild curry powder
- 125 (½ cup) light mayonnaise
- 5 mL (1 tsp) garlic powder
- 10 large lettuce leaves (butter lettuce works best)
Directions
- In a medium bowl, mix all ingredients, except for the lettuce.
- Scoop about 85 to 125 mL (⅓ to ½ cup) of the chicken salad mix onto each lettuce leaf, spread evenly and roll up

Tips
- Get a head start on tomorrow's lunch. Make the chicken salad mix the night before and store in an airtight container. Assemble wraps when ready to eat.
- Make a vegetarian version by replacing the chicken with black beans.
