Update to the List of Permitted Food Enzymes to Enable the Use of Cyprosin as a Food Enzyme in Various Standardized Cheeses

Background

Health Canada's Food Directorate completed a detailed safety assessment of a food additive submission seeking approval for the use of cyprosin as a food enzyme in various standardized cheeses.

Since this is a food additive that was not previously permitted for use in Canada, the Department published Health Canada's Proposal to Enable the Use of the New Food Additive, Cyprosin from the Flower of Cynara cardunculus L. var. altilis DC., as a Food Enzyme in Various Standardized Cheeses on December 1, 2014, requesting comments. No new scientific information was submitted to the Department as a result of this publication.

The results of Health Canada's evaluation of available scientific data support the safety of the food additive use of cyprosin when it is used in the manner requested by the petitioner.

As no safety concerns were raised through this assessment, the Department has enabled the food additive use described in the information document by modifying List of Permitted Food Enzymes, effective April 17, 2015.

The purpose of this communication is to publically announce the Department's decision in this regard and to provide the appropriate contact information for any inquiries or for those wishing to submit any new scientific information relevant to the safety of this food additive.
